It's a fabulous day at Athelhampton, we are busy getting ready for today's wedding. It was time to open the tap for the fountains, and as I walked through the gardens I was reminded of how tranquil and peaceful it is here. It's a busy in the Athelhampton kitchen, and it's often hard work, today the menu has a great summer dish of ham-hock terrine, todays groom had a very specific dish in mind, the terrine that he enjoys often at a local French restaurant. A hard task for Gemma, Head Chef, and I, so we had to pop out for a quick working lunch so that we can recreate the dish exactly, apparently we did a great job, here's a quick snap of it being plated seconds before it leaves the kitchen this
The weather is so awful tonight that I thought I would write a note about the kitchen garden, to go with a great photo from a wedding a couple of weeks ago. The kitchen garden restoration project started in 2014, the pond and paths were restored last year, but this year the planting is looking amazing. (Athelhampton offers private use, and this extends beyond the physical venue, but also to social media, where we don't show faces or share names of our couples)
It's wedding tasting Wednesday again, looking after the second of two couples this evening, it's a great chance to refine the menu to make sure it meets their requirements, a nice choice of home-made desserts tonight, and there's going to be some left for us as well!
